Ingredients
- 5 medium red potatoes
- 1/2 Lb. bacon, cut into 1-inch pieces
- 1/3 cup white vinegar
- 1/4 cup sugar
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp dried thyme
- 1 tsp fresh thyme, chopped
- 1 tsp fresh oregano, chopped
- 2-3 Tbsp. mayo, or to taste
- 1/2 cup chopped celery
- 3 Tbsp. chopped green pepper
- 1/4 cup diced green onions
- 3 hard boiled eggs, peeled and diced
Instructions
- Cook potatoes in boiling salted water for about 30 minutes, or until fork tender.
- While the potatoes cook, prep your veggies and hard boiled eggs; set aside.
- Drain well, and let cool slightly or until able to handle. Once cooled enough to handle, dice potatoes; set aside.
- Fry bacon until crisp; remove from pan, and drain on paper towels. Drain off bacon drippings, reserving 2 tablespoons for use in the skillet; add vinegar, sugar, salt, and pepper to skillet with drippings; cook over medium heat, stirring until sugar is dissolved.
- Remove from heat.
- In a medium bowl, combine potatoes, bacon, celery, green pepper, onion, thyme, oregano; add the dressing, stirring to coat evenly. Enjoy!
