OMG That’s So Good! Potato Salad

Ingredients

  • 5 medium red potatoes
  • 1/2 Lb. bacon, cut into 1-inch pieces
  • 1/3 cup white vinegar
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp dried thyme
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh oregano, chopped
  • 2-3 Tbsp. mayo, or to taste
  • 1/2 cup chopped celery
  • 3 Tbsp. chopped green pepper
  • 1/4 cup diced green onions
  • 3 hard boiled eggs, peeled and diced

Instructions

  1. Cook potatoes in boiling salted water for about 30 minutes, or until fork tender.
  2. While the potatoes cook, prep your veggies and hard boiled eggs; set aside.
  3. Drain well, and let cool slightly or until able to handle. Once cooled enough to handle, dice potatoes; set aside.
  4. Fry bacon until crisp; remove from pan, and drain on paper towels. Drain off bacon drippings, reserving 2 tablespoons for use in the skillet; add vinegar, sugar, salt, and pepper to skillet with drippings; cook over medium heat, stirring until sugar is dissolved.
  5. Remove from heat.
  6. In a medium bowl, combine potatoes, bacon, celery, green pepper, onion, thyme, oregano; add the dressing, stirring to coat evenly. Enjoy!
